You're grain-free, but lately you've been eyeing the pastry display at the coffee shop. Before you give up, try some easy-peasy "5-Minute Grain-free Banana Pancakes." These pancakes are so simple, I often eat them before rushing off to the office or a meeting.
- Two large organic eggs
- One organic banana
- One tablespoon of organic coconut flakes
- One teaspoon of coconut oil to grease the pan
In a blender, add two organic eggs, one medium organic banana, a tablespoon of coconut flakes (super inexpensive at Whole Foods in bulk area), and a dash of cinnamon. Blend until smooth.
In a pan, melt one teaspoon of coconut oil. Then pour half of your batter into the pan, and flip when pancake starts to firm up.
Repeat for second part of pancake batter.
Optional: Top with blueberry, a drizzle of local honey, and more cinnamon.
